    Have I Told You That I Am a Procrastinator?

    Well, I am. So it should be no surprise that I have been sitting on these awards. I have recently been given a few new awards and I'm plumb tickled (I don't really say plumb tickled in case you were wondering, it just came out, and I am leaving it). Nicole of the Young Mama Blog gifted me with these two awards, and Heidi at From 3 to 5 also gave me the Sweet Award a while back:

    Shell from Things I Can't Say blessed me with the Kreativ Blogger Award. Thank you, Shell. If you haven't checked her out yet, please do so...and tell her I said hi! This award stipulates that I share 7 new things and then pass it on to (7) other bloggers. As for 7 things about me: 1. My favorite veggie is the artichoke. 2. I used to pray for small boobs when I was young (what?) 3. I once pooped my pants when I was 7 and couldn't climb down from the tree I was in fast enough to make it to the bathroom (I'm digging deep here). 4. I love the smell of new car tires...like in the store, I generally don't make a habit of sniffing the tires on the actual vehicle. 5. I love a good oatmeal stout. 6. I am currently pondering whether we need a new an addition to our family (yikes). 7. I blush super easily. As in...a cute boy says hello and my face immediately flushes an obvious shade of red.

    We went up to spend Easter with my family in Phoenix this year. I just love being around lots of family for any holiday. It's what make it so special for me. Fortunately I have a husband who is willing to go along with my whims :)

    Last One

    Julie at The Peanut Gallery...exit here, who has wiggled her way securely into my heart, has awarded me with the Honest Scrap award. Thank you, friend. Since I began blogging, this was probably the one and only award I hoped to receive but never did...until now, of course. Now that I've got it (and I am really excited to finally have this one), I am hanging up the old "award" hat. I think they are fun, and I love it when others think of me...but at the risk of sounding like a major ingrate, I can't find the time to do the posts for them anymore. All the crazy linking, standing on your head, picking your nose, winking your left eye, and singing the Star Spangled Banner all at the same time is just a bit much for me.

    So with this one I have to list 10 honest things about me. Honest? Darn it...there has to be a catch, right? I kid. I'm nothing if not honest. Anyway, here goes:

    1. When I was younger I wanted to be a doctor. As I got older, I didn't want to do the school. As I got even older, I regreted not doing the school. Unfortunately, in college I didn't have the foresight which would have enabled me to see beyond my days of bars and boys. Seriously, I wasn't all that bad...pretty mild in comparison to many. In any case, I am quite happy to be where I am today. Can't imagine what my life would be otherwise.

    2. I have eaten some really strange things in my life. As a child in particular. Among those things are dog food and fish food. Don't even ask.

    3. I once peed in a flower bed in a public place. Again, don't ask.

    4. My favorite number is 13, and my favorite colors are blue and yellow. In fact, our wedding colors were blue and yellow! Love, love, love it.

    5. The one place in the world to which I want to travel over any other, is Russia. I am hugely fascinated with their culture. I would even like to learn the language. I actually know a few words and phrases. When I was fresh out of college and living in Dever, Co. I met some people from Russia. They became good friends, and thus my desire to learn more about their culture was spawned. Kak Dela?

    6. I am currently struggling over whether or not we should change my blog tag line to "eight" little feet. Leaning toward keeping it six.

    7. I cry at commercials. I never used to do that. I used to pick on my mom because she does it. Then I had kids, and my hormones went haywire, and never worked themselves back to their original state. Sigh. Now I am as sentimental as they come.

    8. The blogs I love reading the most are those that write about "real" things. Things like their struggles in day to day life. The joy over their family, kids, etc. Humor over things to which we can all relate, and those that have great photography.

    9. Like Julie said...I love music. I agree with her so much. A song can bring you back to a place in time quicker than anything else. I can instantly feel how I felt then, smell things I smelled then. It's amazing. Led Zepplin is one group in particular that brings back a lot of memories that are near and dear to my heart.

    10. With me, what you see is what you get. Sometimes that's great, and sometimes it's not. My husband often accuses me of lacking the "filter" that others have which enables them to say things nicely. He says I can be abrasive. To his credit, he is not the only person who has said this about me. I'm perfectly okay with it. Better, I think, that you know where you stand with me. There is no wondering over what's going on in my head. Well, that last part may not be true. I mean, come on...how can you not wonder what goes on inside the head of someone who eats dog food and pees in public flower beds?

    Now, I am going to pass along my last award.

    The Empress at Good Day Regular People is, without question, an amazing writer. She has her heart in her blog, and I never feel bad about having spent some time "with her." If you haven't, you should go check her out and be sure to tell her I sent you!

    Heide at From 3 to 5 is such a fun person. She's funny. I feel like I "get her." What I like most about her is the feeling that she doesn't put on aires. She is who she is, and is a joy because of it.

    Three more...hang with me.

    Kate, at Kate's Life. I love her heart. She is just an honest to goodness "real" person. I think she radiates warmth, and I like the way she shows genuine care for others.

    Melis at The Zookeeper's Diary. She was one of my first favorites. Still is. When she sits down to "put it out there," she really does. Again, she is full of heart and honest, and has moved me to tears several times.

    Finally, last but not least.

    Sonora at Twinfinity. Sonora was on the verge of giving up blogging when I found her. I think she actually found me first, but I am so happy she did. And I am even happier she decided to stick with the crazy thing. I enjoy reading her posts which are riddled with funny and endearing stories.

    Please, if I passed this to you, don't feel obligated to do anything with it. Chuck it if it pleases you, but I chose you because I honestly think you deserve it.

    The first week of June we took our annual Lake Powell trip. My family has been going there since long before I was born…so it’s a bit of a tradition. As a kid, one of my favorite things about going was that every year we would have some crazy stories to tell. Nothing crazy happened this year, and the adult in me is thankful.

    Warning: Blog operator's brain on fritz...so don't expect much. This post is a bunch of odds and ends, hence the title.

    First and foremost, I am excited to share the fact that I do have a few after pictures to share. Remember this post where I bared my deepest and dirtiest? If you didn't read it, you may want to now. Guaranteed to make you feel better about yourself in five seconds flat however long it takes you to read the post (but read this one first, because it has some cool stuff). So here are the pictures.

    Here's one that wasn't in the last post because I had already shown so much, that I thought enough was enough. Anyway, this was/is one of my dressers. My room now is one place that no longer causes me extra tension.

    Moving on...in doing my cleaning, I came across some books that I have either, never used or used gently. I no longer have a need for them, and would like to know if any of you are interested in any or all of them. If so, please leave me a comment of which book you'd like. I will let them go on a first come, first served basis. ***This is not a giveaway*** Just wanted to see if anyone here wants them before I take them to the used book store.     This one is Kids Create. Its arts and crafts for 3-9 year olds. We have never used it, and sadly I am just not that crafty. But there looks to be some fun things for kiddos to make with moms and dads.

    Last thing I have is a wedding scrapbook. Never used at all. I had already started a different one when I received this as a gift.

    Okay, there is one more thing I want to show you all. I mentioned a while back that one of my favorite gifts for Christmas was a fantastic necklace from Lisa Leonard. It is really awesome. It has all three of my kiddos names on it, it's silver (and I'm a silver kinda gal), and it goes with cute dresses or jeans! So awesome.

    I may or may not be hosting a giveaway really soon. It may or may not have to do with Lisa Leonard! So stay tuned.

    Tasty Tuesday is all about making your life easier, and well...tastier! This week I am bringing in reinforcements. The ever talented and oh so lovely Julie of the Peanut Gallery...exit here is sharing a recipe this week. What a pal, huh? Really though, she is a pal, and I just love her to pieces. Thanks, Julie! Without further nonsense (bet ya thought I'd say "ado")...

    Well, after that intro, I feel like I must live up to the dear Mamma's expectations. I do have some talent...but it ain't so in the area of food preparation. But, if I may brag just a bit..I do have some pretty tasty recipes. When I say "some", I mean about 4!! Yep...that's about all your gonna squeeze out of the lady from the Peanut Gallery. I don't like to cook, and baking...well let's not even go there. While cookies are my favorite thing...mine always turn out like mini cakes, or worse. So if you ever want to become instant friends with me, just bake me some cookies! All this being said...don't run away just yet!

    Today is your lucky day. This is the day when I share one of my "good" recipes. I use the term "my" loosely, because it is not really mine. My first grade teacher had a daughter who was my age. Here name was Paige. We were good buds back in the day. However, we lost touch over the years.

    We were re-united last year. And unbeknownst to me...Paige has blossomed into an absolute guru in the kitchen. Her facebook updates often describe some mouthwatering delicacy that she is preparing, consuming, or sharing with friends. This is one of her soup recipes.

    Yes, I am well aware that we are not in "soup season". However, if you live in the schizophrenic Northwest...then you very well could be having soup like weather. If not..then just tuck this baby away for a rainy day. You won't be sorry!! As an added bonus, because I'm concerned about your health, this is a very healthy soup. Not to mention the musicality of beans!
    *******************************************************
    Paige's White Bean Chicken and Spinach Soup

    2 slices of bacon, chopped

    1 lb. Ground chicken OR Turkey Sausage (I wouldn't use the Turkey sausage if I were you!)

    1 Teaspoon Fennel Seeds (only if you use the ground chicken...not needed if you use the turkey sausage because fennel is already in sausage. I prefer the ground chicken though)

    1 Teaspoon Red Pepper Flakes (or to taste)

    3+/- Garlic Cloves, grated on micro-plane (my preference) or diced

    2 Cans White Beans with juice (Great Northern Beans or Cannellini Beans)

    2 Quarts Chicken Stock

    2 cups Spiral or Elbow Pasta (I use Barilla's multi-grain pasta...very good and good for you!)

    Fresh Baby Spinach- About 4 handfuls of chopped

    Brown bacon then add ground chicken with fennel seeds (or turkey sausage), garlic, and red pepper flakes. Add beans, undrained, and chicken stock. Simmer for as little 5 minutes or up to 45 minutes. Add pasta and spinach and simmer 8-10 minutes more. Make sure and remove from heat when pasta is done or noodles will get really mushy.

    ***Most important step: Serve with a drizzle of extra virgin olive oil, Parmesan cheese, and crusty multi-grain bread. Good for the soul!!!

    ***I second Paige's thoughts on using ground chicken. I've tried it with ground chicken, ground turkey, turkey sausage, and just plain chicken breast. The ground chicken is BEST...hands down!

    Here's a little trick if your kids don't like beans...mash up one can. Then it won't seem so "bean laden"!

    Lately more and more items have been placed to the highest points possible in our home. No matter what efforts we take, however, it seems my little 3 year old angel manages to foil them.

    Child proof Tylenol? Pft. Maybe...but not Addyson proof. Dental floss in the medicine cabinet? Not anymore. Oh, and that one isn’t because I have moved it…nope…that one is because the sweet cherub unraveled the whole stinkin’ thing all over my bathroom counter.

    But my favorite? Her inventive way of putting maxi pads to use. Ingenious if you ask me.

  • Tasty Tuesday...Honey Glazed Chicken

    I have a cookbook titled "Quick & Easy" and it is one of my favorites for a go to meal. Today I am sharing a recipe from that book. A recipe we tried on the spur of the moment, and loved. Sorry...for those of you who like pictures with your recipes...today I have none. But what I can offer, is an easy and yummy meal!

    Honey-Glazed Chicken

    Ingredients:
    8 skinless chicken thighs
    salt
    Scant 1 1/4 Cups medium sherry
    1 Tablespoon cornstarch
    3 Tablespoons honey
    3 Tablespoons red wine vinegar
    1 Tablespoon dark soy sauce
    3 garlic cloves (minced)

    Instructions:
    Preheat broiler to medium. To make glaze, pour 1 cup of the sherry into a small pan and bring to a boil. Continue to boil fo r6 minutes, or until reduced by half. Meanwhile, mix the remaining sherry and cornstarch together in a bowl until it forms a smooth paste. Remove the sherry from the heat and whisk in the honey, vinegar, soy sauce, and garlic. Return the pan to the heat and whisk in the cornstarch paste. Let simmer, whisking constantly, for about a minute, then remove from the heat and let cool slightly. Season the chicken with salt and place them on a broiler rack. Brush generously with the glaze and cook under the preheated broiler for 7 minutes. Turn the chicken over, brush generously with the glaze and broil for an additional 3-4 minutes, or until the chicken is completely cooked through. Serve immediately.

    We like to have steamed broccoli and brown rice. By the way, you could use this glaze with chicken on the grill as well. Simple and tasty ;)

    Mama M. is truly wonderful, and it has been quite some time since I have participated in her Five question Friday. So, even at the risk of running some off with my overdoingitness in the blog hop department, I am playng along today.

    1. Who would you want to play you in a movie of your life?
    Sandra Bullock...pretty much hands down. Not based on looks, AT ALL. But just based on her personality. She is super quirky. I dig that about her. I'm pretty quirky myself (some say I'm just plain old weird, but I am not letting my illusion of cute quirkiness be shattered like that).

    2. Did you ever go to summer camp?
    Once. It was when I was 15. I was staying with my cousins in Chicago, and I went with them to a camp in North Carolina that was part of their church group. I had a great time, and still have find memories from that week.

    3. What sends you running and screaming in the other direction?
    Cockroaches. Nasty little critters. Now, I will catch and kill them, but it wigs me out...in a MAJOR way. I am always afraid the thing will escape my trap and touch me. Thank goodness we don't have an issue with them here or I would insist we move. To any place. Can't stand them!

    4. What is something you do that drives your spouse nuts?
    I actually posted about this a while back, and have a discussion here (come share after you're done reading, will ya?) about something similar. Without question it's my obsession with having the covers neat and straight before going to sleep. That's right, I don't make the bed when I get up, but before bed...I want perfection. It makes him batty, because if he's dared to get into bed before I've had a chance to straighten the sheets, I will just straighten around him. He gets mad every single time. You'd think he'd just get over it by now.

    5. What is currently your favorite song?
    Not that the song itself is current, but probably Need You Now by Lady Antebellum. Love it.

  • Tasty Tuesday- Shredded Chicken Tacos

    Tasty Tuesday- Shredded Chicken Tacos

    Looking for some new ideas to feed the family? Tasty Tuesday may be just the thing for you. I love to cook, and love even more to cook for other people. Since I can’t have you all over to eat one of my meals, this is a close second. This week, I’m cooking up some shredded chicken tacos. These are another of my family’s favorites…and pretty easy to make.
    Ingredients:
    Premade Corn Taco Shells (I like Stand N’ Stuff) about 12 shells
    1lb boneless/skinless chicken breast (can use thigh meat as well)
    Worcestershire Sauce (to taste, approx. 2-3 tablespoons)
    Chili Powder (to taste, approx. 2-3 tablespoons)
    Sea salt (or regular salt, to taste)
    1/4 Cup plus 1-2 tablespoons Olive Oil
    1/2 yellow onion (diced)
    3 cloves garlic (minced)
    2-3 Roma tomatoes (diced to top tacos)
    Iceberg lettuce (shredded to top tacos)
    2 Cups Shredded cheddar cheese
    Any condiments you like…i.e., sour cream, salsa, guacamole.Instructions:
    Preheat oven to 350 degrees
    In a large pot, boil chicken breasts (uncut) until no longer pink. Remove chicken from water and cool until able to handle. Using two forks, hold one piece of chicken with one fork, and use the other fork to rake over the meat towards you in order to shred. Repeat process until all chicken is shredded. Set aside.

    In a large skillet, add 1-2 tablespoons olive oil, onion and garlic and sauté until tender over medium heat. Add shredded chicken, and the remaining olive oil. Stir well to coat. Add chili powder and Worcestershire sauce. Stir well. Add a dash or so of salt. Taste it. If you want a little more spice, add chili powder. If you want it a bit more savory/sweet add more Worcestershire sauce. Or both! Once the chicken is to your liking remove it from heat.
    Place your taco shells on a cookie sheet. I prepare mine with foil made into rivulets to provide a sort of stand for the shells. Then fill each shell with some of the chicken mixture, and top with shredded cheddar cheese (to your liking). Place tacos in preheated oven until cheese is melted, and shells are just lightly toasted.

    Remove from oven, and serve! Load with your favorite condiments and toppings, and enjoy. We like having our tacos with refried beans (you can use black), and rice.

    There you have it. Oh, and if you are like me, and trying to “be good,” then you can turn your serving into a salad like I do. Just save some of your chicken mixture for that (chances are you will have extra anyway).

    Tasty Tuesday...An Mamma Original

    Okay...It's been long enough since I have posted a legitimate recipe on Tuesday, and I know how many of you rely on me to feed your family (I have self importance issues). So I'm back with a recipe I invented out of necessity one night. If you are seeking something healthy, seek somewhere else. If you are seeking something cheesy and oh so yummy, look no further. I bring you a lasagna style casserole. Except it's not really lasagna. It's, well, just read on...

    Mamma's Casserole

    Ingredients:
    1Pkg Chicken (approx. 1lb boneless breast or thigh)
    1 Bag whole wheat wide egg noodles
    1 bag frozen chopped spinach (thawed...is that an oxymoron?)
    1 8oz package of cream cheese
    1/2 yellow onion (minced)
    2-3 cloves garlic (minced)
    36oz of your favorite spaghetti sauce
    1 1/2-2 Cups cheddar cheese
    1 1/2 Cups fresh grated parmesan (not canned)

    Instructions:
    Preheat oven to 400 degrees. Spray a 13X9 baking dish with nonstick spray, set aside.

    Cook pasta according to package directions. Drain, and set aside.

    Saute onion and garlic in a medium pan til soft. Add thawed spinach and cook through. Add cream cheese, mix well and keep warm.

    Cube raw chicken, and saute(use non stick spray or a bit of olive oil) in a large pan until no longer pink. Add spaghetti sauce.

    Now, for the layering. You can layer them any way you'd like...but here's how I did it.

    Layer 1/3 chicken mixture then top with 1/2 of the noodles. Layer additional 1/3 chicken mixture again. Top with all of the spinach/cream cheese. Layer all of the parmesan cheese. Top with remaining noodles, remaining chicken mixture. Top with cheddar cheese.

    Bake until heated through, then broil at 550 degrees til slightly browned at edges and bubbly.

    Serve it with whatever you want! Steamed broccoli, or asparagus are great. Again, this is an invention so it has only ever been taste tested by our family, but it was a major hit with everyone. If you like cheesy, and tasty, then give it a try. Wish I had pictures for you...maybe one of you can make it and get some photos for me. Hey, figured it was worth a shot ;)

    Salmon Scallopini: For all you salmon lovers, this one is pretty darn good if I do say so myself. All measurements in this recipe are approximations because it is one from the old noggin'. I played around a couple different times before settling on this, and now it's almost the only way we will have it in our home.

    Ingredients:

    1.5 pounds fresh Salmon fillet (about 4-6 oz per person...so more or less depending on family size).
    Olive oil
    2 Tablespoons butter
    3 cloves garlic (finely minced)
    2 Tablespoons capers
    2 Roma tomatoes (diced)
    1/4 Cup white wine
    3/4 Cup Chicken broth
    1 Teaspoon cornstarch (mixed with 1 teaspoon water)

    Instructions:

    Remove any skin from Salmon, and cut into 4 to 6 oz portions. Coat the bottom of a large heavy bottomed skillet with olive oil (you don't want to fry, but you do want your pan coated). Set aside. Melt butter in a medium sized skillet over medium-low heat. Add garlic and saute till tender, but not brown. Wisk in wine, and simmer, letting liquid reduce by about half. Wisk in chicken broth and continue to let simmer.

    Now heat your large olive oil coated skillet over medium-high heat. Add salmon in a single layer (cook in batches if needed). Cook through (length will depend upon thickness of fillets, about 3.5 minutes per side). Fish will flake fairly easily when cooked done. Remove from heat and plate the salmon. Add capers, tomatoes and cornstarch to your wine sauce and wisk in. Allow to heat through for about 30 seconds, then pour the mixture over the salmon. Serve.

    It's great served with or over a simple angel hair pasta, and steamed asparagus on the side. You could go crazy and do some garlic bread as well. It's a favorite (mostly) all the way around in our home.

    P.S. I really dislike tile counter tops!

    I'm hitchin' a ride on the Keely train again today. I know she has a new button, but I'm a rebel. I like the old one because it links back to her blog. So maybe I'm not a rebel so much as I am lazy and I just don't have the energy to cut/copy the new button and create a link too.     1. What's your favorite Easter candy?
    Toss up between the two most disgustingly awesome candies ever. Cadburry Creme Eggs, or Marshmallow Peeps. I'd have to go with the Creme Egg. I could go for one right now.

    2. Who do you think is cleaner..men or women?
    This is a loaded question. Honestly I think it depends on the person. I have seen absolute slobs from both categories. I think my husband and I are equally matched in the clean department.

    3. Which do you prefer..wordy blog posts or ones with pictures?
    My answer is not a definite one or the other. In general, I like the posts that are not ultra long, however...when it is well written and keeps my attention, then I like it. Pictures are always great, whether the post is long or short.

    4. Were you popular in highschool?
    I was in this strange sort of limbo land. I had friends from the "cool crowd," and ones from the "not so cool crowd." I honestly felt like I could relate to the uncool kids better than my other friends. Not sure what that makes me. After all this time, still trying to figure out where I belong :)

    5. What's your bra size?
    All I'm going to say to this, is that after nursing my two little ones for over a year each...my breasts could now be featured on the front cover of National Geographic. How's that for a mental image?

    6. How many states have you lived in?
    Four. California, Arizona, Massachusettes, back to Arizona, Colorado, and back to Arizona...in that order.

    7. What's one blog you read every day?
    I don't know that there is one blog that I read every day. There are several that I read each time they post, but it's not daily usually. I know this is all in an effort to get me to name drop. Just look at the blogs I have listed on the right side of my blog. I really love them all. They are the ones I frequent.

    8. Peanut butter or Nutella?
    It took me forever to try Nutella, and I do think it's tasty...but I have to go with good ol' peanut butter. Love it in my oatmeal.

    Okay, you all asked, and my husband answered. One of the qualifiers to get him to do this was that I could in no way edit what he wrote. So this is all him, without any meddling from me. I didn't say, however, that I wouldn't add my two cents if I felt it warranted. Just saying...and if my two cents does show up anywhere, it will be in orange. Now, on to your questions and his answers.

    Melis of The Zookeeper's Diary asked: If your wife could have any profession BESIDES being a SAHM, what would you want it to be? And why? And do you read her blog? What do you think of it? And finally, would you ever consider moving your family to where I live and buying the house next-door so we can all be IRL friends? Is that weird?

    Any profession – A photographer seeing as she has an eye and a passion for it.

    Do I read her Blog? – Are you all kidding?…hardly ever, but I don’t need to…I live it everyday.

    What do I think of her blog? – I have always thought her to possess a true gift when it comes to that of the written form…On the occasion when I curl up with a cup of coffee and my computer to catch up on the latest prose of “Arizonamamma,” she confirms my thoughts.

    Would I consider moving to be your neighbors and is that weird? – I know you are joking…

    What made me fall in love with your wife? – her independence, beauty, charm and her complete acceptance of me.

    How did we meet? -We worked together on an outside sales team.

    Will we have more kids? – I can’t answer this one on my own…AZMAMMA has a pretty big stake in this answer as well…however, if it were up to me I think that there will be no more children conceived.

    What do we all do for fun as a family? – Every Saturday morning we get up just as the sun is about to rise in the East…saying East is silly…doesn’t it always rise in the East? Anyway, we ALL get up just before the sun rises…we bring plenty of water, lunch and our trimming shears…we hike 13 miles (AZMAMMA and I take turns pulling our two youngest children in the wagon, they certainly couldn’t make the trek on their own) to the llama farm and we sneak into their grazing area….On even days AZMAMMA lasso’s three of these creatures while I teach the children how to shave cool designs into their fur….on odd days, we switch places…The kids find this absolutely hysterical and the llamas, well they don’t seem to mind one bit either….On the way home we usually dig 2 random holes with a large baking spoon (I don’t find this particular activity “fun” at all, but the rest of the family does and sometimes we gotta do what we gotta do). (If you all think this is serious, then you haven't been reading my blog for very long...I would never let anyone use my baking spoon to dig holes).

    What do I think my wife’s best physical feature is? – AZMAMMA was very blessed when it comes to her ‘4th point of contact,” her rear end. This, in my humble opinion, is her best physical feature….****This is where I must put my disclaimer, I am sure that ALL of you were hoping for some romantic answer like the beautiful sparkle in her eyes when she is truly happy, or the curls in her hair when she styles it my favorite way…maybe you even wanted me to answer with the color of her lips after she has had a glass of wine…but what can I say? I am an ass man and even after two children that shit ROCKS!!!!(Sorry, there should have been a disclaimer regarding the PG13 language...this is the only spot though).

    What do I do for a living? – I work in a sales management job for ADP

    West Point is one of those places that is wonderful to be from and not be at…but looking back, in a warped demented type of way, I did enjoy it. I certainly took it seriously and internalized the discipline. Was it worth it? Yes, I would not go back and do it any differently

    I would have to say the amethyst heart and chain that I got for her on her 1st Mother’s Day. (I can't resist...I have to explain a little more why this one is so great. It has amethyst which is Addyson's birthstone, and a tiny bit of diamond, which is mine...it was the most perfect Mother's Day gift ever...very thoughtful).

    I can choose only one?…That hardly seems fair as many situations I find myself in with her are weird, not to mention all the stories I have heard of the weird antics of this person…and they are weird because she makes them so. I have struggled with this one and I thought, could it be the time that she clucked like a rooster as she was following behind a group of people? Could it be the time that she dissected a water dog while bored on a fishing trip? Could it be the time she shouted a reminder out of the car window as I trekked through the busy supermarket parking lot, “Don’t forget your hemorrhoid cream!”…No, these are all weird, but I gotta say one of her finest moments occurred on this blog.     Seeing as how this was asked by one of my siblings I can’t, in good conscience, answer this. A very fine gentlemen recently advised me to steer clear of offending any one of my siblings, because if you do it may permanently damage a relationship no matter how many “I’m sorry’s” you try to throw at said situation…

Sometimes I feel it interferes with our time together…She never lets it interfere with the childrens' time…but when I ask her if I can get some of her time she obliges…As far as a good outlet for her – sure, I guess so.

Our eat-in kitchen…some of the most scrumptious things in the entire world are created in that space just awaiting my consumption…but more importantly, AZMAMMA and I both agree that sitting down as a family for dinner is extremely important. Over the last five years some of my most cherished memories are those that were shared and created while we have broken bread over dinner…

    Am I originally from AZ? Nope, my Dad was a career Marine so I don’t have an original home…I ended up in AZ after my short stint in the Army came to a conclusion. I found my first corporate career in PHX.

    If money were not a factor how would I spend the next year? I would want to travel to Australia, Ireland, Brazil, Hawaii and Iceland… I would also like to spend several weeks with our out of state family.

    What kind of vehicles do we own? We own a Ford Expedition (Our second vehicle is one issued to him through work...it's a Mercury).

    What is my favorite household chore to do/help with? While I do not consider this a chore, it is a task that needs to be done -- Giving our two young children a bath and getting them ready for bed, followed up by reading them 3 stories.(He does this every night! Every.single.night.)

    My favorite meal? Salmon Scallopini or Stuffed Pork Tenderloin. (Irony of this is I don't make these that often, and neither has been a Tasty Tuesday feature...yet).

    That's it! This is Mamma again, and I just want to give a huge thank you to my husband for being (mostly) a good sport about this. Can I let you all in on a little secret? I did mention this idea to him in a passive way, but I never actually got his consent before I drove forward with it. He was thrilled, let me tell you!   • These are a Few of My Favorite Things Blogs

    I'm an addict. Blogging is my drug of choice. Fortunately (or unfortunately depending on how you view it) for me, there are so many blogs to read. The problem is, in addition to being addicted to the blog world, I am also a mom. I don't have the time to invest in searching out blogs to read. I have meals to make, a house to ignore clean. Playdates to attend. The list goes on. I do, however, have some blogs I love to read... those which make me feel excited if they have a new post. Today, I thought I would share some of them with you.

    I will only mention a few today, and plan to do a series of posts like this over time. The blogs in this post are in no particular order, and are not necessarily my most favorite...they are just in the forefront of my mind.

    Let's get on with it.

    Melis at Diary of a Zookeeper. She's great. Her writing is intelligent, witty, funny, endearing and compelling all rolled into one. While reading one of her posts, I am often "in her moment," feeling as if I am seeing things through her eyes. Her down to earth nature, and warmth make me feel as if we have been friends for a long time. I'm sending you to one of her more heartfelt posts. If you are not reading her blog, you are missing out on a real treat.

    Michele at Finding Trinity. I love funny. So, I love her. She is an awesome blog friend, always leaving witty or thoughtful comments on my posts. She has a raw honesty about her that is just charming and well...funny! Again, she is down to earth (sensing a trend here), and easy to read. What are you waiting for? Go have a look for yourself. Sending to you a post that will allow you to get to know her well right off the bat.

    The last person I will tell you about today is Heide of From 3 to 5. The thing about Heide is that she is as real as they come. I think I first took a liking to her because she so reminded me of one of my old friends. However, as I have gotten to know her more and more, I just think she is great in her own right! She makes me laugh...like all the time. Here's the best part, I think she's funny even when she's not trying to be so. She just tells a story sometimes in such a way that I can't help but find humor in it. Please go see for yourself what I mean. I am sending you to a Friday Fragment post she did, and there is a bit about nose picking that cracked me up.

    I just finished getting my assignment together for the photography class I am taking. It's Saturday night (as I write this), and Keely sent me the questions ahead of time so I could get this post done. Isn't she swell? I think so.     1. Would you rather bungee jump or sky dive?
    Really? Hmmm...would I rather plunge to my death via faulty parachute or faulty rope? Guess I'd say parachute. It would probably most resemble the feeling of flying, and because I fly in my dreams I'd love to see what it's like in real life.

    2. When using a public restroom to you squat over the seat or sit?
    Always hover. Never sit. YUCK! As gross as this is, I even use my forearm as a barrier between the seat and my daughter's butt when I take her to the bathroom in public. I can scrub my arm, not so easy to do with her butt.

    3. Favorite flower?
    Tulip or calla lilly or tulip...I can't decide. I love them both...had both in my wedding.

    4. Pedicure or manicure?
    There once was a woman who actually had time for this sort of thing. Where did she go?
    5. How many siblings do you have?
    One fabulous brother. Three years younger than I.

    6. Do you pee in the shower? (gasp!)

    I have been remiss. It has been at least a couple of weeks since I have participated in Five Question Friday with Mama M. Not very cool of me. Afterall, I would hope that if I ever started a meme that people would play along. Hint hint at (maybe) something to come.

    1. Do you sing karaoke? If so, what is your go to song?
    I used to love karaoke. This was before my mommy hood days. When I could drink a six pack of beer for courage first. Not so much anymore. However...wanna see me shame myself with some vocal un stylings? Then go see this post.

    2. What is your favorite coffee drink?
    Actually, I do like a good flavored latte. Like caramel. Usually, though, I just drink flavored coffee at home with a little creamer.

    3. If you could choose your own name, what would it be?
    I actually find it impossible to come up with anything that just doesn't seem odd. Can't imagine anything other than Shannon.

    4. Were you ever bullied?
    In sixth grade...yes...by a BOY! The little bastard. That is, until one day I punched him and he cried...all the while complaining that I hurt his sunburn. Pft...yeah right weenie. Never bothered me again.

    5. How often do you eat fast food?
    Could I have a definition of fast food please? I never eat anything like McDonald's, etc. I do eat Chipoltle on occassion, and have been known to have the odd Subway. So if that counts, then maybe once every other week I guess.

    This week Heather of Traveling Down the Tracks With D and H is sharing one of her favorite recipes with us all. It looks delicious and I will certainly give it a try.     Beef Burgundy

    Ingredients :

    3 tablespoons extra-virgin olive oil, divided, plus additional as needed
    4 slices bacon, chopped
    2 1/2 pounds sirloin or sirloin tips, cut into large, bite-size pieces
    Salt and freshly ground black pepper
    1/3 bottle red burgundy wine
    2 cups beef stock
    1 package frozen pearl onions
    2 teaspoon sugar
    5 tablespoons butter, divided
    1/2 pound mushrooms, quartered
    2 tablespoons flour
    1 teaspoon orange zest
    1 pound wide egg noodles
    A handful chives, minced Instructions:

    Preheat oven to 375°.
    Salt and pepper the sirloin tips and set aside. Preheat Dutch Oven and olive oil. Chop up bacon(easiest way to do this is to use kitchen shears). Cook in the pot until it is brown and crispy.

    Remove bacon and add beef. You may have to do this in a few batches. Add more olive oil as needed and brown all the sides. Remove the beef and add 1/3 of a bottle of wine. Stir it to release any brown bits from the bottom. Let it bubble and reduce slightly.

    Then add 2 cups of beef stock and the beef and bacon back to the pot. Cover and place in the oven. After 1 hour prepare water for the noodles. Then, place the onions in a pan to cook. The recipe calls for sugar to go in with the onions, I don't add this, I just add the water and it is fine. Then get a pan ready for the mushrooms. Add one tablespoon of olive oil and one tablespoon of butter. Cook the mushrooms until brown. After they are done cooking add salt and pepper. When the onions and mushrooms are done, combine them by putting the mushrooms in the onion pan. When the meat is done cooking in the oven (30 minutes after you started getting the water, onions and mushrooms started) take it out of the oven and place on a burner. I don't add the onions and mushrooms yet. First, I get the roux ready by heating up 2 tablespoons of butter and then sprinkle the flour over it. Cook it, stirring constantly for about a minute. Then add liquid from the pot and stir until thick. Add that to the pot and stir. Then add the mushrooms and onions and let it simmer for a few minutes. When your noodles are done cooking add a tablespoon of butter and the chopped chives. Serve the beef burgundy over the noodles.

    Enjoy!I changed this recipe slightly by omitting the sugar and orange zest.

    Tasty Tuesday-Peanut Butter Cheesecake

    In case you've missed one of the thousand times I have mentioned that I have a sweet tooth, I am saying it again. I have a sweet tooth. Heck, I don't think I have a tooth in my whole mouth that isn't a sweet tooth. That said, this today I am pushing my need for sweets onto you. I made this for Andy's birthday because it combines three of his favorites: peanut butter, chocolate and cheesecake. Top that!

    Peanut Butter Cheesecake:

    Ingredients:
    Peanut Butter Chocolate Crust (ingredients/recipe below)
    1 package (8oz) softened cream cheese
    2 Tablespoons lemon juice
    1 1/2 Cups Reese's PB Chips
    1 1/3 cup (14oz can) sweetened condensed milk (not evaporated!)
    1 Cup heavy whipping cream

    Instructions:
    Prepare PB chocolate crust; set aside. Beat cream cheese with lemon juice in large mixer bowl until light and fulffy. Combine PB chips and sweetened condensed milk in medium saucepan. Cook over low heat stirring constantly until chips are melted and mixture is smooth. Add warm mixture to cream cheese mixture.

    Whip cream until stiff. Fold into PB mixture with a spoon, and blend well. Pour onto prepared crust; chill several hours or overnight.

    Crust:
    1 1/4 cups vanilla wafer crums
    1/4 cup Hershey's cocoa
    1/4 cup confectioner's sugar
    1/4 cup butter (melted)
    1/2 cup Reese's PB chips (chopped into tiny bits, but not in blender)

    Combine wafer crumbs, cocoa, confectioner's sugar and melted butter. Stir in chopped PB chips. Press into 9-inch springform pan.

    This treat is super rich, but oh so yummy! You won't regret trying this one.

  • Breathing Life into Your Blog

    Recently I have read many posts which give advice on the "how to's" of blogging. Don't fret, this is not one of them (though I do have some thougts on the matter). I actually like reading those posts. Oftentimes they offer some helpful tips on how to improve things. Who doesn't want to improve? I especially like it when it comes from the author of a blog I truly enjoy. It's like free advice on how to become better received.

    There is, however, one thing I don't like about some of these posts that I have read. I don't want to be told about what I should or shouldn't blog. I already have my own parameters. For example, (with this minor exception) I will not blog about my husband's ex-wife. Off limits...for me. Does that mean I will think poorly of another blogger who does chose to write about that topic? Absolutely not. In fact, I quite enjoy it at times because I can certainly relate to some of the situations. Some people are very religious, and like to express it openly for all to read. Again, not necessarliy my comfort zone, but not going to turn me away either. Often there are some very thought provoking posts on the subject...and it doesn't matter what religion it is, or how they write the post. If it's not for me, I skip it. No harm no foul.

    I love my blog. I love my readers. I love my avid commenters! I want to be able to write whatever I feel, and not have to think about whether I may be offending someone. Isn't that what blogging is? A space of our very own to share our thoughts? What fun would it be if we were all cookie cutters of eachother, spitting out the same tired thoughts on the same tired subjects? I would lose interest in no time.

    One of the many wonders of blogging is all the different personalities behind the blogs. Some I turn to and I know I will always get a laugh. Some usually leave me thinking of something in a way I hadn't before...and others are just plain fun. Do I love every post, every time? No. That would just be impossible. So, on those posts, I take a pass and come back again another day.

    If you are anything like I am, and you have worried about your posts and what others might think...I say stop it. It's your blog. Your space. Make it yours. Give it a life by breathing into it your voice...whatever that may be. When you write what's in your heart, it will allow others to really connect on a different level. Some of my favorite blogs are unabashed about sharing anything and everything. Let's be clear, I am not talking about this tired old line about blogging boldly. I am simply saying don't censor based on what you think others may like or not. You will never please the entirety of the masses...but those who do connect will enjoy it all the more. I certainly do.
